Director, Food & Merchandise Operations

Who are we hiring?
The Director, Food & Merchandise Operations is accountable for the overall operation of all of the Food & Merchandise departments. He/she ensures an exceptional guest experience by overseeing and aligning all Food & Merchandise team members. The director collaborates across functions to achieve business results and reacts as needed within a fast paced and dynamic environment. Success in this role is demonstrated by exceptional customer experience, a commitment to the engagement and development of team, and achievement of business results. The Director, Food & Merchandise Operations reports to the VP, Food and Merchandise Operations.

What will you do?

  • Sets direction for supervisory team and front-line staff to ensure the consistency of operational procedures as well as the employee and guest experiences across all food, beverage, and merchandise  departments.
  • With an innovative mindset, develops and implements new strategies, programs, technology, and products to ensure  Food and Beverage goals are met
  • Manages P&L statements according to business plans to include approving labor activities and payroll, partnering with culinary team on menu selections and pricing, partnering with Warehouse team to maintain product inventory levels and par levels/readiness of equipment. Meets regularly with VP, Food and Merchandise and Finance team to ensure accuracy of reports.
  • Maintains communication with culinary team on trends, presentations and food quality for all areas
  • Works closely with Purchasing department on beverage orders, par levels and sourcing new products. Collaborates with F&B peers and with other departments to identify efficiencies and best practices and to execute organizational initiatives and compliance with city and state regulations.
  • Partners on the full-cycle recruitment, hiring and development of leadership team and front-line staff; plays an active role in training and development of leadership team members by providing continuous feedback, stretch assignments and other opportunities for growth
  • Conducts periodic meetings with F&B leadership covering Southern Nevada Department of Health (DOH) guidelines, cleanliness initiatives, service and product changes and Company-wide communications.  Regularly attends pre-shift meetings with front-line team.
  • Maintains a high level of integrity and role models a positive attitude and adherence to all Company objectives and goals; ensures that all team members are engaged, upbeat, and delivering an exceptional guest experience.

SPECIAL REQUIREMENTS OF THE JOB:

 

  • ServeSafe Manager Certification
  • Lifting 25 lbs., standing for long periods and walking long distances.
  • Ability to work a flexible schedule including nights, weekends, holiday, and split days off; willing to travel to other venues as needed.

What do you need to succeed?
  • 8- 10 years of Food, Beverage and Merchandise management experience, to include oversight of fine dining and catering operations within an entertainment venue or hotel and multi-unit experience.
  • Proficiency in Point of Sale (POS), purchasing and inventory systems.
  • Proven success managing budgets and resource allocations.
  • Strong project management skills with successful track record implementing operational and technology-related improvements in a complex organization.
  • Success managing cross-functional teams and building collaborative relationships that motivate and encourage performance.
  • Adaptable to new technology platforms for current and future integration
  • Excellent communication skills and ability to engage with all levels in the organization in a variety of settings and group sizes.
  • Adept at maintaining a positive, open, approachable, and professional relationship with a diverse group. Demonstrates integrity, tact, diplomacy and a commitment to company values, and principles while ensuring the upmost consistency
  • Demonstrated experience coaching, mentoring, and developing staff and building accountable teams.
  • Proactive self-starter with proven ability to manage multiple tasks while under tight deadlines.  Possesses exceptional attention to detail and strong follow up skills.
  • Comfortable employing sound business judgement to manage conflict and resolve guest concerns with a sense of urgency.
  • PC skills including MS Word, Excel, Outlook and PowerPoint
  • Previous experience within Sports & Entertainment, theater operations or event planning is preferred.
  • Demonstrated knowledge of Collective Bargaining Agreements (CBA) and the ability to manage a non-union and unionized workforce.
