Executive Chef

Who are we hiring?
The Executive Chef is responsible for food production of all departments and ensuring a high level of quality service for the front and back of the house. This position reports to the VP, Food and Merchandise Operations

What will you do?

• This position provides operational planning to ensure adequate products and equipment are ordered for anticipated business levels.
• Forecasts and adequately schedules team members to meet operational needs and desired targets.
• Manages all premium kitchen spaces, with direct oversight into the concessions locations as well
• Mentors all chefs and assists with their development and training.
• Maintain and enforce sanitation laws and safety standards with individuals entering kitchen area.
• Ensure the consistency in the preparation of all food items according to MSG recipes and standards
• Maintain and enhance the food products through creative menu development and presentation.
• Assist People Practices, legal and , appointed members of management with contract negotiations.
• Review inventory methods and controls to assist in the reduction of product loss while maintaining efficiencies.
• Help formulate and adhere to direct and indirect departmental budgets

SUPERVISION:

 

• Sous Chefs, Cooks, and prep cooks

 

SPECIAL REQUIREMENTS OF THE JOB

 

• Frequent lifting and carrying of up to 30 pounds
• Constant standing and walking throughout shifts
• Occasional kneeling, pushing, pulling, and lifting required

What do you need to succeed?

• Minimum 10-15 years of prior senior management experience in a large volume culinary or catering operation with multiple outlets
• Experience with menu design, planning, culinary instruction, and presentation. Must be a visionary, staying ahead of trend while delivery world class cuisine in all aspect of our business
• Ability to manage financials as it pertains to food costing and purchasing modules
• Certified and versed in Southern Nevada (DOH) Department of Health regulatory standards is required.
• Must have valid ServSafe Certification
• Excellent verbal & written communication, organizational and time management skills required
• Must be able to multi-task and prioritize in a deadline-oriented environment
• PC skills including MS Word, Excel, Outlook and PowerPoint
• Possess exceptional attention to detail and strong follow-up skills necessary
• Experience in managing cross functional teams and building relationships
• Successful track record of measuring improvements in customer satisfaction and loyalty
• Demonstrates integrity, tact, diplomacy and a commitment to company values, and principles while ensuring the upmost consistency
• Adept at maintaining a positive, open, approachable, and professional relationship with a diverse group
• Problem solving, reasoning, motivational and organizational abilities are used often
• Strong interpersonal/customer service skills
• Successful track record of measuring improvements in customer satisfaction and loyalty
• Able to work under pressure and meet deadlines, while managing multiple tasks.
• Must be able to work a flexible schedule inclusive of weekends, nights and holidays required
• Must be willing to travel to other locations as needed
